One of the  things I remember growing up, is that there were always cans of tuna in our kitchen’s pantry, my mom used to give us tuna with everything and we loved it! So following her tradition I do the same thing and my kids love it as well, we eat tuna at least once a week and for me is the perfect meal, because it’s super easy, quick to prepare and extremely healthy! That’s why I decided to share this recipe my sister taught me, Penne Pasta with Tuna and Salsa Roja.

This is a recipe, I make at least 3 times a month, sometimes even more! Because it takes less than 20 minutes to prepare, I always have all the ingredients at home , my family loves it and you can always give it a new twist, for example, salsa verde, chipotle but in this case I’ll make our favorite with salsa roja.

I used the Barilla® penne pasta, but in Walmart, for example, you can find the Barilla®  piccolini, tri-color, multigrain, veggie, and even gluten-free versions. My Penne Pasta with Tuna and Salsa Roja recipe works great for quick meals and on the go, because you can eat it hot or cold.

Here’s a step by step on how to prepare:

Ingredients:

  • 1 box Barilla® Penne Pasta
  • 2 cans of tuna
  • Extra Virgin Olive oil
  • 1 medium size onion, chopped
  • 4 Tomatoes
  • 2 Avocados
  • 2 tablespoons of Chicken Flavor Bouillon
  • 1/2 cup Parmigiano-Reggiano, shaved

Directions:

Penne Pasta with Tuna and Salsa Roja directions

  • Cook pasta in the boiling water according to the package directions.
  • Add the tomatoes and 1 tablespoon of Chicken Flavor Bouillon to the blender to make the salsa roja.
  • On a saucepan heat the extra virgin olive oil and sauté the onions.
  • Drain the can of tuna and add it to the saucepan.
  • Add the salsa roja.
  • Drain the pasta and add it, mix all the ingredients.
  • Cut small pieces of avocado and add it on top.
  • After serving it top the pasta with shaved Parmigiano-Reggiano cheese.
