This first webisode “El Mejor Flan del Mundo” was filmed at popular Los Angeles bakery, Porto’s Bakery & Café where we saw one of the owner’s daughters Beatriz Portos shared her family’s recipe for one of their most popular deserts, flan! So you can make it at home, it would make a great dessert for a Holiday party don’t you think?
Me for example specially during the Holiday season, I love to bake or prepare all kinds of desserts and if they are made with milk I know I’ll feel positive and happy all day long, one of my family’s favorite desserts is Pastel de Tres Leches or Three Milk Cake, which is the most popular Mexican dessert after flan of course.
My grandma used to make me Pastel de Tres Leches every birthday until she passed away 11 years ago but, I inherited her recipe and it’s so good that I’m sharing it with you, believe me, after having a piece of my cake you’ll feel very happy!
Pastel de Tres Leches Recipe
9 eggs, separated
1 cup of sugar
1 tablespoon vanilla extract
2 cups all purpose flour
Tres Leches Mix
1 14oz can La Lechera seweetened condensed milk
1 12oz can evaporated milk
1 cup of regular milk
1 tablespoon vanilla extract
2 cups of heavy whipping cream
¼ cup of confectioner’s sugar
2 cups of cajeta o dulce de leche
Preheat oven to 360 degrees
Grease your baking dish
Beat egg whites in a large mixing bowl with an electric mixer on high until stiff peaks form, slowly stir in the sugar until mixture is glossy, move the egg white mixer into a mixing bowl.
Rinse the bowl of the mixer and its whisk. Pour the egg yolks into the bowl of the mixer and beat in medium-high speed until the egg yolks become creamy and they are not so yellow anymore. Stir in the vanilla. Turn off the mixer.
Pour the egg yolk mixture onto the egg white mixture and combined them into a single batter with a spatula, it’s important to mix them gently so the mixture doesn’t lose volume, now add flour and mix it well.
Pour the batter into a prepared baking dish.
Bake in the preheated oven for about 20-25 minutes, until cake is lightly browned and a toothpick comes out clean, just a bit moist., when ready let it cool for about 15 minutes.
Turn it onto a platter, with an upside down platter invert again, with a fork poke wholes all over the cake, you’ll see the purpose of this later.
In a mixing bowl combine, La Lechera seweetened condensed milk , evaporated milk and regular milk, add the vanilla extract. Pour the Tres Leches mix all over the cake, the wholes will help absorb it.
You can either spread whipped cream or cajeta or dulce de leche on top.
In the bowl whip up the heavy whipping cream with the confectioner’s sugar on medium-high speed for about 2-3 minutes and spread the whipped cream mover the cake.
Cajeta or Mexican caramel
Pour the cajeta in a saucepan. Heat over medium heat, stirring and gently simmering it for a couple of minutes until it is well dissolved and spread it over the cake.
