My boy is a big fan of the film Despicable me, more specifically the Minions, he’s crazy about them, so when I was given the challenge to create a school lunch using, Bumble Bee, fresh ingredients and my imagination I couldn’t think of anything better than a Minion inspired tuna sandwich and to tell you the truth even I was surprised because it came out really good, delicious and super healthy!

And it wasn’t that difficult to make, it took me 20 minutes to prepare 2 sandwiches for my boys and here’s how I did it:

Instructions to create the train and Minion:

    • On a chop board, place the slice of bread and draw the Minion and train.
    • Using a small sharp knife carefully cut it, this is the tricky part, so take your time. The secret is doing it slowly and no shaking hands. (Do this twice for the bottom part of the sandwich)
    • Place the crackers on the bottom of the piece of bread to draw and cut the 2 wheels. (Do this twice for the bottom part of the sandwich)

    • Using a button, draw  the Minion’s head on the white cheese and the eye, as well as the mouth (Draw it like a banana)
    • On the American cheese, cut a rectangle for the train’s window
    • On  the seaweed cut a very thin line for the Minion’s face.
    • Using the cream cheese as glue, stick everything on the piece of bread including the crackers.
    • Spread the tuna on the bottom part of the sandwich and place the top part.

I know it sounds like a lot of work but it isn’t, the only tricky part is cutting the small pieces that’s why I used an exact.  I love this recipe because all the ingredients (Except the cream cheese but I used a tiny bit) are fresh and healthy, specially tuna, which did you know; Tuna is an excellent source of protein and is easily digestible by young children. Canned tuna is also low in fat and calories, contains essential vitamins and minerals and is rich in omega-3 fatty acids – which are especially important during early childhood for eye and brain development.

You can get as creative as you like, for example, make the face of Minion yellow, cutting a piece of American cheese, add some cheese or seaweed to the center of the wheels, they are so many ways to play around with this tune recipe, depending how much time you want to spend. I’ll tell you this,  what made all this work worth it, was my kids’ face we he saw the his favorite character, a Minion driving a train! He love it and I got a big kiss!
