Football Sundays at my house are a big deal! And as important as a touchdown from our favorite team is, the food is as well.
Specially since my two boys started to like the game I have to really prepare for the Big Game on Sundays. While my kids and husband play some football, I get ready for the Football Sunday. Of course I don’t cook a different recipe every week (You know I’m not a chef) But once in a while, specially when family and friends are coming over I get very creative and cook something different and it’s usually a hit!
My recipes usually have a Mexican twist, because I’m sorry, but we have the best ingredients and Mucho Sabor! So I had to use La Morena products which you know I really like because I’ve shared several recipes on this blog using La Morena products who have been bringing authentic sabor Mexicano to tables for over 25 years!
I love La Morena products because they’re authentic, they remind me of my Abuelita’s cooking, they have truly Mexican flavor and they make my recipes taste like Mexican gourmet! La Morena products can be found at many supermarkets across the country, I bought mine at Northgate Market. You’ll find La Morena products where the canned chiles, sauces and beans are and the best thing, you’ll never pay more than $3 for a 7 oz can.
For the Big Game, it’s easier and more fun to serve snack-bites instead of an entree, since I know everyone likes pizza I decided to give it a Mexican twist and I made Mexican Mini-Pizzas using two of my favorite La Morena products, Refried Beans and Sliced Green Pickled Jalapeño Peppers, the pizza turned out to be delicious and so easy to prepare!
Want to give my recipe a try? Here’s what you’ll need:
- 2 Mini-Pizza Crusts
- 1 small can of Tomato Paste
- Meat of your choice (I used chicken)
- 1 Large Avocado
- 1 Bunch of Cilantro
- 1 Bunch of Green Onions
- 1 Can of La Morena Refried Beans
- 1 Can of La Morena Green Pickled Jalapeño Peppers
From start to finish, this recipe will take you less than 20 minutes and even the kids can help you and make it a Game Cooking Family Day! Here’s step by step how to prepare my Mexican Mini-Pizzas.
Spread the tomato paste on the pizza crust and on top spread La Morena Refried Beans and your choice of pre-cooked meat. Preheat the oven to 450° and place the pizza crust on a nonstick pizza pan or any pan and put it in the oven for 8-10 minutes. Take it out of the oven.
Chop the green onions and spread them over the chicken and follow with the cilantro. It’s already looking delicious and we still have to add one of the main ingredients!
La Morena Green Pickled Jalapeño Peppers aren’t that spicy, at least for me, but I’m Mexican, but if you like some spice you can add as much as you want, I cutted the Jalapeño Peppers to make them thinner but you don’t have to do it. Now is time for the last ingredient and one of my favorites because it will even the spice, avocado! By now you already now I love avocados, I use them in recipes every chance I get. Cut the avocado in small pieces and add as much you like to your Mexican Pizza.
That’s it, did you how easy it was to prepare this Mexican Mini-Pizza! The best part of this recipe, is that you can be as creative as you want, you can add any of your favorite Mexican ingredients! Want to make it even more spicy? Use Chipotle sauce instead of tomato sauce, La Morena has delicious Chipotle Peppers in Adobe Sauce as well!
